What I Like About It:

Nutrition, Immunity & Inflammation - This incredible mushroom is exceptionally nutritionally-dense, offering up large amounts of protein, fibre and essential fatty acids, as well as many crucial minerals & vitamins such as B1, B2, B12, C, D, and E.

Aside from ticking so many nutritional boxes, it also boasts super high levels of Beta-glucans ( or β-glucans) and polysaccharides which have been indicated to help boost immunity, repair damaged cells and lower inflammation. This is beneficial for everyone, but particularly anyone who is very active or has low immunity.

All-in-all, it's like taking a mushroom multi-vitamin!

My Favourite Mushroom For Food - As probably the most famous culinary medicinal mushroom in the world, it's no surprise that it is the perfect mushroom powder to cook with. This one works brilliantly in anything you'd use vegetable stock for (soups, pasta, stir-fry, stew etc.), adding endless flavour and numerous benefits. There's an excellent Chaga miso soup recipe that adding shiitake too makes a level better again!

What is Shiitake Mushroom? 

As you've probably gathered by now, it is a light to dark brown colour 'wide-cap fungus' that grows naturally on the decaying logs of certain trees throughout the world, but primarily within South-East Asia.

Coming from a Japanese word, the prefix shii- refers to the type of tree the mushroom grows on, and the suffix -take, meaning 'fruit of the mushroom'.  Other names you'll find for it include "sawtooth oak mushroom", "black forest mushroom", "black mushroom", "golden oak mushroom", or "oakwood mushroom".


Health Benefits of Shiitake Mushroom:

In Traditional Chinese Medicine, Shiitake is primarily used to boost general health, increase longevity and improve circulation. Modern science has pinpointed a number of specific compounds (namely beta-glucans and polysaccharides) that help aid the immune system while also providing anti-oxidative and anti-inflammatory effects. 

Beta-glucans (as well as other bioactive compounds such as eritadenine & sterols) are indicated to help with issues like hypertension & cholesterol, even displaying anti-cancer effects.

How to Use Shiitake Extract:

As previously mentioned the flavour profile is distinctly 'umami' (savoury) and works perfectly in broths, stews, stir-fry, pasta and basically any other savoury dish.

Don't be afraid to experiment with it in your cooking, but again, one of my favourites is simply adding it to this Chaga miso soup recipe - the perfect place to start!

As for dosage, start out with ¼ to ½ tsp daily and work up to a 1 tsp per day from there, pending it sits right with you of course.
