Sweet potato has long been used as a dietary staple in many cultures for thousands of years due to its incredible flavour, texture, hardiness and health benefits! Full of fibre and rich in many vitamins & minerals, this super versatile vegetable is so much more than just a dinner side!
No recipe shows just how versatile it is better than this epic Golden Sweet Potato Pancake Stack by the brilliant Raimee Leigh (find her on insta: @raimeeleigh).
Artfully prepared using The Bircher Bar Golden Latte Mix, read on below to find out exactly how she did it and how you can whip it together for yourself!
Sweet Potato Stack
-1 large sweet potato
-80g of greek yogurt
-1/2 a banana
-15g of raspberries
-1 tbsp of natural Peanut Butter
-15g of granola or muesli
- 5g of cacao nibs
1. Peheat the oven to 185 degrees C.
2. Chop the sweet potato into slices about 1/2 a centimetre thick and evenly season with the golden latte mix and place in oven for about 45min or until sweet potato is cooked all the way through.
3.Once sweet potato is cooked layer with yogurt, sliced banana and raspberries in whatever order you prefer. Get creative!
4.Drizzle peanut butter over the top and then sprinkle granola and cacao nibs. Enjoy
